Spicy Lentil Cream Soup


Excellent soup for a chilly day. Hearty taste from this simple soup.
Lentils contain high levels of proteins, including the essential amino acids and are an essential source of inexpensive protein in many parts of the world for those who adhere to a vegetarian diet.




 

Ingredients: (6 person)

  • 1 small tea spoon of rye seeds
  • 1/2 tea spoon of coriander seeds
  • 2 tablespoon of olive oil 
  • 1 and 3/4 oz of smoked bacon
  • 1 head of red onion
  • 2 cloves of garlic
  • 40 oz of vegetable stock
  • 10 oz of red lentils
  • 1 small cup of tomato sauce
  • 2 tomatoes 
For Serving:
  • 1 handful of parsley
  • 1/2 oz of sour cream
  • 1 head of sweet onion
  • 1 table spoon of olive oil

1.)
Sear the rye and coriander seeds in a hot dry pan unit they are brow and put on the side in a small plate. Pour the olive oil in the pan and add the bacon diced up in small pieces. Cut the onion into rings and saute it on the oil and bacon.

2.)
Add the browned seeds and crushed garlic to the mix and finally pour the stock over it. Bring to boil and add the water rinsed red lentils.

3.)
Dice the tomatoes and add to the boiling soup with the tomato sauce. Reduce the heat and simmer until the lentils are soft. You can check this by pressing a lentil with your thong to your teeth. After the lentils are done, use a blender the process the soup.

4.)
Mix the chopped parsley into the sour cream in a small bowl. Cut the sweet onions into rings and fry it  in the oil until crispy brown. Pour the blended soup into bowls, put a spoon of the sour cream - parsley in the middle and decorate it with the fried sweet onion rings.
